Ingredients
  

Main
  • 2 ripe avocados halved and pitted
  • 1 tbsp olive oil
  • Salt and black pepper to taste
Toppings (Optional but Recommended)
  • 1/2 cup cherry tomatoes diced
  • 1 tbsp red onion finely chopped
  • 1 tbsp fresh cilantro or parsley
  • 1 tbsp lemon or lime juice
  • Chili flakes optional

Equipment

  • Grill pan or outdoor grill
  • Knife
  • Spoon
  • Brush (for oil)

Method
 

Prepare avocados:
  1. Cut avocados in half and remove the pit. Brush lightly with olive oil.
Preheat grill:
  1. Heat a grill or grill pan over medium heat.
Grill:
  1. Place avocados cut-side down on the grill. Cook for 3–5 minutes until grill marks appear.
Prepare topping:
  1. In a bowl, mix tomatoes, onion, herbs, and lemon juice.
Assemble:
  1. Flip avocados and fill the center with the topping mixture.
Serve:
  1. Sprinkle with salt, pepper, and chili flakes if desired. Serve immediately.

Notes

  • Use slightly firm avocados for best grilling
  • Don’t over-grill they can become too soft
  • Add feta or eggs for extra protein
