Prepare avocados:
- Cut avocados in half and remove the pit. Brush lightly with olive oil.
Preheat grill:
- Heat a grill or grill pan over medium heat.
Grill:
- Place avocados cut-side down on the grill. Cook for 3–5 minutes until grill marks appear.
Prepare topping:
- In a bowl, mix tomatoes, onion, herbs, and lemon juice.
Assemble:
- Flip avocados and fill the center with the topping mixture.
Serve:
- Sprinkle with salt, pepper, and chili flakes if desired. Serve immediately.
Notes
- Use slightly firm avocados for best grilling
- Don’t over-grill they can become too soft
- Add feta or eggs for extra protein
